Halwai Style Onion Kachori Recipe

- Flour - 2 cups
- Semolina - 1/2 cup
- Onions - 2 large (finely chopped)
- Ghee - 1/4 cup
- Salt to taste
- Cumin seeds - 1 teaspoon
- Green chillies - 2 (finely chopped)
- Coriander leaves - 2 tablespoons (chopped)
- Garam masala powder - 1/2 teaspoon
- Asafoetida - 1/4 teaspoon
- Oil for frying
- Water as needed
Instructions
Preparing the Dough:
- In a large bowl, mix flour, semolina, ghee, salt, and cumin seeds.
- Gradually add water and knead a soft dough.
- Cover the dough and let it rest for 15-20 minutes.
Making the Filling:
- Heat oil in a pan.
- Add asafoetida and let it sizzle for a few seconds.
- Add chopped onions, green chillies, coriander leaves, garam masala powder, and a little salt.
- Mix well and cook for 5-7 minutes.
Making the Kachoris:
- Knead the dough again.
- Divide the dough into small balls.
- Roll each ball into a thin circle.
- Place a little oil on a plate and place the circle on it.
- Add the prepared onion mixture to the center of the circle.
- Close the circle and seal it tightly.
- Roll it out again to a larger size.
- Repeat with the remaining dough.
Frying:
- Heat oil in a pan.
- Fry the kachoris until golden brown.
- Remove the kachoris and place them on a paper towel to absorb excess oil.
Serving:
- Serve hot kachoris with green coriander chutney or pickle.
