Ingredients:
For the Bhaji:
- 1 tsp butter
- 2 tsp oil
- 250 grams potatoes, cut into cubes
- 5 cups finely chopped tomatoes
- 1 cup cauliflower florets
- 1 cup carrots, diced
- 1/4 cup beets, diced (for a red color)
- Salt to taste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tbsp Cook with Ishi’sPavBhaji Masala
- 1 tbsp ginger paste
- 2-3 cups water
- 1 tbsp butter (for serving)
- Lemon juice (for serving)
- Coriander leaves (for serving)
For the Pav:
- 1 tbsp butter
- Coriander leaves
- PavBhaji Masala
- 1 tbsp prepared Bhaji
- Pav buns
- Tomatoes, chopped
- Lemon juice
Method for PavBhaji Recipe (Without Onion or Garlic):
- Prepare the Vegetables:
- In a pressure cooker, add butter, oil, potatoes, tomatoes, cauliflower, carrots, and beets.
- Add salt, turmeric powder, red chili powder, PavBhaji Masala, and ginger paste.
- Mix well and add 2-3 cups of water.
- Cook for 2-3 whistles or until the vegetables are tender.
- Mash the cooked vegetables using a potato masher or a ladle.
- Cook the Bhaji:
- Heat a large pan with 1 tbsp oil and 2 tbsp butter.
- Add 1 cup finely chopped cabbage and cook until lightly browned.
- Add ginger paste, salt, turmeric powder, red chili powder, and PavBhaji Masala.
- Add the mashed vegetables from Step 1 to the pan.
- Stir well and cook for 5 minutes.
- Adjust the consistency with water as desired.
- Cook for 2 more minutes.
- Add lemon juice, butter, and coriander leaves.
- Prepare the Pav:
- Heat a griddle with 1 tbsp butter.
- Add coriander leaves, PavBhaji Masala, and some prepared Bhaji.
- Place a pav bun on top and grill on both sides.
- Serve the Bhaji in a bowl with butter, grilled pav, chopped tomatoes, and lemon juice.
