Black Forest Tiramisu

Preparation:
For the Tiramisu:
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 8 ounces mascarpone cheese, softened
- 1 cup brewed coffee, cooled
- 2 tablespoons cherry liqueur (optional)
- 24 ladyfinger cookies
- 1 cup cherries, pitted and halved
- Shaved chocolate, for garnish
For the Cherry Sauce:
- 1 cup cherries, pitted and halved
- 1 tablespoon lemon juice
- 1 tablespoon granulated sugar
- 1/4 cup water
- 1 tablespoon cornstarch
Method:
- Prepare the Tiramisu:
- In a large mixing bowl, beat the heavy cream, sugar, and vanilla extract until stiff peaks form.
- Add the mascarpone cheese and beat until smooth and creamy.
- In a shallow dish, mix the brewed coffee and cherry liqueur (if using). Quickly dip each ladyfinger cookie into the coffee mixture, making sure not to soak them for too long.
- Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers. Top with half of the halved cherries.
- Repeat the layers with the remaining ingredients, ending with a layer of mascarpone mixture on top.
- Cover and refrigerate for at least 4 hours or overnight to set.
- Make the Cherry Sauce:
- In a saucepan, combine the cherries, sugar, lemon juice, and water over medium heat.
- Cook until the cherries are soft and the sugar has dissolved, about 5-7 minutes.
- In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry.
- Stir the cornstarch slurry into the cherry mixture and cook until thickened, about 2-3 minutes.
- Remove from heat and let cool before serving.
- Assemble and Serve:
- Before serving, garnish the chilled tiramisu with shaved chocolate and drizzle with the cherry sauce.
- Slice and serve chilled.
