  • 1 pack noodles
  • 2 tablespoons oil
  • 2 tablespoons garlic and ginger paste
  • 2 finely chopped green chilies
  • 1 cup long-chopped cabbage
  • 1 cup long-chopped capsicum
  • 1 cup long, thinly sliced carrots
  • 1 cup long, thinly chopped onions
  • 5 cups chopped green onions
  • 2 tablespoons Schezwan sauce
  • 1 tablespoon red chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon ketchup
  • 1 teaspoon vinegar
  • Salt and pepper to taste

Method:

  1. Prepare the noodles:
  • Add salt to boiling water and then add the noodles. Boil on high flame for 2 minutes, then turn off the flame and cover with a lid. Boil for 2 more minutes.
  • Drain the noodles in a strainer and pour cold water over them. Let them soak for 5 minutes to remove excess starch.
  • Sprinkle 2 teaspoons oil and 2 teaspoons cornflour on the noodles. Mix well and fry in hot oil until golden brown.
  1. Prepare the sauce:
  • Heat oil in a pan and add the ginger-garlic paste. Fry for 30 seconds.
  • Add the chopped vegetables and fry on high flame for 2 minutes.
  • Add all the sauces, salt, pepper, vinegar, and cook for another minute.
  1. Combine:
  • Finally, add the fried noodles and stir well.

Serve immediately.
