Preparation:
Ingredients:
- 250 grams kakora (bitter gourd)
- 1 large onion, thinly chopped
- 2/3 green chili, thinly chopped
- 1 small tomato, thinly chopped
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red pepper powder
- 1/2 teaspoon garam masala
- 1 teaspoon cumin
- Salt to taste
- 2-3 tablespoons oil
- Green coriander (for decoration)
Method:
- Heat oil and add spices: Heat oil in a pan. Add cumin and let it sizzle. Then add green chili and onion and fry until golden brown.
- Add spices: After the onion is golden brown, add turmeric powder, coriander powder, red pepper powder, and salt. Mix well.
- Add tomatoes and Kakora: Add tomatoes and cook until soft. Then put the kakora and mix well.
- Cover and cook: Cover the pan and cook on medium flame for 10-15 minutes. Keep stirring occasionally to prevent burning.
- Add garam masala and green coriander: Add garam masala and green coriander. Cook for a few more minutes until the vegetables are ripe and the masala is well coated.
- Serve: Turn off the gas and serve the kakora vegetable hot with chapati or paratha.
