Bikaneri Dal Paratha Recipe

Ingredients for Bikaneri Dal Paratha Recipe :
- Whole wheat flour 500 gm
- Split Bengal gram (Chana da) 150 gm
- Whole cumin 15 gm
- Nagauri Methi 15 gm
- Asafetida 1 pinch
- Red chili powder 25 gm
- Salt to taste
- Coriander powder 15 gm
- Turmeric Powder 15 gm
- Mint 25 gm
- Green coriander 25 gm
- Ginger 25 gm
- Green Chili 25 gm
- Amchur Powder 10 gm
- Black pepper 10 gm
- Ghee 50 gm
Method for Bikaneri Dal Paratha Recipe :
- Pressure cooks the Soak dal with water and salt for 2-3 whistle or till tender.
- In the meantime combine Whole wheat flour and salt, add sufficient water and knead into soft and
smooth dough, cover with a wet cloth and keep aside. - If dal has cooled down then grinds it without water to a coarse paste.
- Heat ghee in a kadhai, add whole cumin, hing, coriander powder, red chili powder turmeric
powder and crushed black pepper. Add the dal paste and stir cook for 4-5 minutes or till it becomes
dry add mint coriander and Amchur powder. - Remove from the fire and keep aside to cool then divide it into 15 equal portions and set aside.
- Divide the dough into 15 equal portions, roll into balls, flatten the balls with your palms and place a
portion of stuffing in the center, bring the edges together and shape into a ball again. - Press lightly and roll into a thin paratha, dust it with flour if needed. The parathas should be thin.
- Heat sufficient ghee on hot plate, slide the paratha gently and cook both the sides evenly till golden
in color. Serve the paratha with fried green chili, pickle and curd.
