Ingredients for Chicken Quesadillas:
- 2 medium chicken breasts, pounded to 1/2-inch thickness
- 2 teaspoons taco seasoning
- Olive oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 medium yellow onion, thinly sliced
- 3-4 cups shredded Monterey Jack cheese
- 6 large flour tortillas
- 4 tablespoons unsalted butter
Method for Chicken Quesadillas:
- Season and Cook Chicken: Season both sides of the chicken breasts with taco seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 6-8 minutes per side, or until cooked through. Remove and let rest, then slice into thin strips.
- Sauté Vegetables: In the same skillet, add more olive oil if needed. Sauté the red and green bell peppers and onion until softened and slightly charred.
- Assemble Quesadillas: Heat a large skillet over medium heat. Add 1/2 tablespoon of butter. Place a tortilla in the skillet and sprinkle half with cheese, chicken, and vegetables. Top with more cheese.
- Cook Quesadillas: Fold the tortilla in half and cook for 2-3 minutes per side, or until golden brown and the cheese is melted.
- Serve: Remove from the skillet, cut into wedges, and serve immediately.
