Preparation:
Ingredients:
- 1 pack noodles
- 2 tablespoons oil
- 2 tablespoons garlic and ginger paste
- 2 finely chopped green chilies
- 1 cup long-chopped cabbage
- 1 cup long-chopped capsicum
- 1 cup long, thinly sliced carrots
- 1 cup long, thinly chopped onions
- 5 cups chopped green onions
- 2 tablespoons Schezwan sauce
- 1 tablespoon red chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon ketchup
- 1 teaspoon vinegar
- Salt and pepper to taste
Method:
- Prepare the noodles:
- Add salt to boiling water and then add the noodles. Boil on high flame for 2 minutes, then turn off the flame and cover with a lid. Boil for 2 more minutes.
- Drain the noodles in a strainer and pour cold water over them. Let them soak for 5 minutes to remove excess starch.
- Sprinkle 2 teaspoons oil and 2 teaspoons cornflour on the noodles. Mix well and fry in hot oil until golden brown.
- Prepare the sauce:
- Heat oil in a pan and add the ginger-garlic paste. Fry for 30 seconds.
- Add the chopped vegetables and fry on high flame for 2 minutes.
- Add all the sauces, salt, pepper, vinegar, and cook for another minute.
- Combine:
- Finally, add the fried noodles and stir well.
Serve immediately.
