- 1/2 teaspoon garam masala
- 1/2 teaspoon amchur powder (dried mango powder)
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cloves
- A few cashews (finely chopped)
- A few almonds (finely chopped)
- A few raisins
- 2 tablespoons sweet chutney
- Oil for frying
Method for Crispy Masala Kachori Recipe:
- Prepare the dough: In a bowl, combine flour, salt, and oil. Gradually add water and knead until a soft and pliable dough forms. Cover and let it rest for 15-20 minutes.
- Make the stuffing: In a pan, heat oil. Add cumin seeds and let them sizzle. Then add fennel seeds, coriander powder, turmeric powder, red chili powder, garam masala, amchur powder, cardamom, cloves, cashews, almonds, sev, and salt. Mix well and cook for 1-2 minutes. Add raisins and sweet chutney. Cook for another minute. Let the stuffing cool down.
- Assemble the kachoris: Divide the dough into small balls. Roll each ball into a circle and fill it with the stuffing. Seal the edges tightly.
- Fry the kachoris: Heat oil in a deep pan. Fry the kachoris until golden brown and puffed up. Drain on paper towels.
- Serve: Serve hot kachoris with tomato chutney, mint-coriander chutney, or spicy chili sauce.
Tips: You can store these kachoris in an airtight container for up to a month. Reheat them in the microwave before serving.
