  • 2 tablespoons oil
  • 1 large tomato
  • 1 whole red chili
  • 100 grams khoya (dried milk)
  • 1/2 teaspoon mustard seeds
  • 1 chopped green bell pepper
  • 1 tablespoon ghee
  • 200 grams spinach
  • 1 teaspoon cumin seeds
  • 1 1/2 cups mixed vegetables (peas, sweet corn, carrots, cabbage, beans)
  • 3-4 cloves
  • 1 cinnamon stick
  • 50 grams paneer cubes
  • 2-3 green cardamoms
  • Salt to taste
  • 6-7 garlic cloves
  • 1 tablespoon coriander-cumin powder
  • 5-6 green chilies
  • 1 tablespoon Kitchen King masala
  • 1 piece ginger
  • 1/2 teaspoon turmeric powder
  • 1 finely chopped onion
  • 2-3 tablespoons cashew-watermelon seed paste Cream, for garnishing

Method:

  1. Prepare the spinach: Boil spinach in water with a little sugar for 4-5 minutes. Drain and rinse with cold water. Blend into a puree.
  2. Prepare the tomato and garlic paste: Blend garlic, green chilies, and ginger into a paste. Blend tomatoes into a puree.
  3. Cook the vegetables: Boil mixed vegetables in water until tender. Don’t overcook.
  4. Prepare the cashew-watermelon seed paste: Soak 5-6 cashews and 1 tablespoon watermelon seeds in warm water for 10 minutes. Blend into a paste.
  5. Cook the gravy: Heat oil and ghee in a pan. Add cumin seeds, cloves, cinnamon, and green cardamoms. When cumin seeds turn brown, add garlic-green chili-ginger paste and sauté for a while.
  6. Add onions and spices: Add finely chopped onions and sauté until translucent. Add cashew-watermelon seed paste and sauté. Add tomato puree and sauté until oil separates. Add green bell pepper and sauté for a while. Add coriander-cumin powder, Kitchen King masala, roasted cumin powder, and turmeric powder. Mix well.
  7. Add khoya, spinach, and vegetables: Add grated khoya, spinach puree, and a little water. Mix well. Add boiled vegetables and salt. Mix well and cook on low heat for 4-5 minutes.
  8. Add paneer: Finally, add paneer cubes and mix.
  9. Tempering: Heat oil or ghee. Add mustard seeds and dry red chili. Pour this tempering over the prepared dish. Garnish with fresh cream.
