Ingredients

  • Flour - 2 cups
  • Semolina - 1/2 cup
  • Onions - 2 large (finely chopped)
  • Ghee - 1/4 cup
  • Salt to taste
  • Cumin seeds - 1 teaspoon
  • Green chillies - 2 (finely chopped)
  • Coriander leaves - 2 tablespoons (chopped)
  • Garam masala powder - 1/2 teaspoon
  • Asafoetida - 1/4 teaspoon
  • Oil for frying
  • Water as needed

Instructions

Preparing the Dough:

  • In a large bowl, mix flour, semolina, ghee, salt, and cumin seeds.
  • Gradually add water and knead a soft dough.
  • Cover the dough and let it rest for 15-20 minutes.

Making the Filling:

  • Heat oil in a pan.
  • Add asafoetida and let it sizzle for a few seconds.
  • Add chopped onions, green chillies, coriander leaves, garam masala powder, and a little salt.
  • Mix well and cook for 5-7 minutes.

Making the Kachoris:

  • Knead the dough again.
  • Divide the dough into small balls.
  • Roll each ball into a thin circle.
  • Place a little oil on a plate and place the circle on it.
  • Add the prepared onion mixture to the center of the circle.
  • Close the circle and seal it tightly.
  • Roll it out again to a larger size.
  • Repeat with the remaining dough.

Frying:

  • Heat oil in a pan.
  • Fry the kachoris until golden brown.
  • Remove the kachoris and place them on a paper towel to absorb excess oil.

Serving:

  • Serve hot kachoris with green coriander chutney or pickle.
