Method:

  1. Heat oil: Heat oil in a pan.
  2. Add spices: Add mustard seeds and cumin seeds. When they crackle, add curry leaves.
  3. Sauté onions: Add chopped onions and fry until golden brown.
  4. Add aromatics: Add chopped green chilies, grated ginger, and finely chopped garlic. Fry for a few minutes.
  5. Add spices: Add turmeric powder and red chili powder. Mix well.
  6. Cook gram flour: Add gram flour and fry on low flame, stirring continuously to prevent lumps and ensure it turns golden brown.
  7. Add water: Add water and mix well to avoid lumps.
  8. Simmer: Add salt and cook on low flame until the gram flour mixture thickens and starts leaving the sides of the pan.
  9. Serve: Garnish with finely chopped coriander leaves and serve hot.
