Preparation for Jhunka:
Ingredients:
- 1 cup gram flour
- 2 finely chopped onions
- 2-3 finely chopped green chilies
- 1-inch piece grated ginger
- 4-5 cloves finely chopped garlic
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 10-12 curry leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- 2-3 tablespoons oil
- 2 cups water
- Coriander leaves for garnishing
Method:
- Heat oil: Heat oil in a pan.
- Add spices: Add mustard seeds and cumin seeds. When they crackle, add curry leaves.
- Sauté onions: Add chopped onions and fry until golden brown.
- Add aromatics: Add chopped green chilies, grated ginger, and finely chopped garlic. Fry for a few minutes.
- Add spices: Add turmeric powder and red chili powder. Mix well.
- Cook gram flour: Add gram flour and fry on low flame, stirring continuously to prevent lumps and ensure it turns golden brown.
- Add water: Add water and mix well to avoid lumps.
- Simmer: Add salt and cook on low flame until the gram flour mixture thickens and starts leaving the sides of the pan.
- Serve: Garnish with finely chopped coriander leaves and serve hot.
