Ingredients:
- 200 grams French beans, cut into roundels
- 2 carrots, chopped into fine cubes
- 2 capsicums, chopped into fine pieces
- 1/4 cup green peas
- 2 potatoes, chopped into big cubes
- 2 big onions, finely chopped
- 1 big tomato, finely chopped
- 1 teaspoon ginger-garlic-chillies paste
- 1 teaspoon red chili powder
- 1 teaspoon dhania powder (coriander powder)
- 1 teaspoon jeera powder (cumin powder)
- 1/4 teaspoon haldi (turmeric powder)
- One sachet majic-e-masala (optional)
- Little hing (asafoetida)
- Salt to taste
Method:
- Prepare vegetables: Cut French beans into roundels. Chop carrots, capsicums, and potatoes into the specified shapes.
- Sauté onions and capsicums: Heat oil in a pan. Fry onions and capsicums together until brown.
- Add spices: Add ginger-garlic-chillies paste and sauté until the raw smell disappears. Then add chopped tomato, red chili powder, coriander powder, cumin powder, turmeric powder, hing, and salt.
- Cook until oil separates: Cover the pan and cook until the oil separates and the tomato is soft and mushy.
- Add vegetables: Add the prepared vegetables to the pan. Mix well and cover.
- Cook until vegetables are tender: Cook for 25-30 minutes, stirring occasionally.
- Garnish and serve: Garnish with chopped coriander leaves and serve hot.
