Railway Wali Aloo Ki Sabji:

Ingredients:
- 3 tablespoons oil
- 1 tablespoon cumin seeds
- 3 green chillies, finely chopped
- 1½ tablespoons red chili powder
- ½ teaspoon turmeric powder
- ½ teaspoon coriander powder
- Salt to taste
- 5 tomatoes, finely chopped
- 2 medium potatoes, boiled and roughly cut
- Coriander leaves, finely chopped
Method:
- Heat oil and temper: Heat oil in a kadhai (wok). Add cumin seeds and let them splutter. Add green chillies and cook for a minute.
- Add spices: Add red chili powder, turmeric powder, and coriander powder. Mix well.
- Cook tomatoes: Add tomatoes and cook until they soften or leave oil.
- Add potatoes: Add salt and mix well. Add boiled potatoes and cook for 3-4 minutes, stirring continuously to prevent sticking.
- Add water and simmer: Add water as needed to make a gravy. Cook for another 5 minutes.
- Garnish and serve: Garnish with chopped coriander leaves. Serve hot with puri.
