Method:

  1. Heat oil and temper: Heat oil in a kadhai (wok). Add cumin seeds and let them splutter. Add green chillies and cook for a minute.
  2. Add spices: Add red chili powder, turmeric powder, and coriander powder. Mix well.
  3. Cook tomatoes: Add tomatoes and cook until they soften or leave oil.
  4. Add potatoes: Add salt and mix well. Add boiled potatoes and cook for 3-4 minutes, stirring continuously to prevent sticking.
  5. Add water and simmer: Add water as needed to make a gravy. Cook for another 5 minutes.
  6. Garnish and serve: Garnish with chopped coriander leaves. Serve hot with puri.
