Raj Kachori Chaat Recipe

For Kachori:
- Suji (semolina): 2 cups
- Atta (whole wheat flour): 1/4 + 1/4 cup
- Oil: 4 tablespoons (for moyan)
- Salt: to taste
- Water: as needed (for kneading dough)
For Filling and Serving:
- Potatoes
- Kabuli chana (chickpeas)
- Moong dal (mung beans)
- Tamarind chutney
- Green chutney
- Onion
- Tomato
- Green chili
- Chaat masala
- Red chili powder
- Cumin powder
- Pomegranate seeds
- Fresh coriander leaves
Method:
- Make the Kachori Dough: In a bowl, combine suji, atta, salt, and oil. Knead a stiff dough, adding water as needed. Cover and rest for 10-15 minutes.
- Roll and Fry Kachori: Divide the dough into small balls. Roll them out into thin circles. Deep-fry in hot oil until golden brown and crispy. Set aside.
- Assemble the Chaat: Lightly break the fried kachori. Fill with boiled potatoes, kabuli chana, and moong dal. Top with tamarind chutney, green chutney, onion, tomato, green chili, chaat masala, red chili powder, and cumin powder.
- Garnish and Serve: Sprinkle with pomegranate seeds and chopped coriander leaves. Serve immediately.
