For the Batter :

  • 1 cup all-purpose flour (maida)
  • 1/4 cup ghee (clarified butter)
  • 1/2 cup cold milk
  • 1 cup cold water
  • 1/4 tsp cardamom powder
  • A pinch of saffron strands (optional)

For the Sugar Syrup:

  • 1 cup sugar
  • 1/2 cup water (for sugar syrup)

For Frying and Garnishing:

  • Ghee or oil for frying
  • Chopped nuts (almonds, pistachios) for garnish
  • Silver vark (optional)

Method:

  1. Prepare the Batter:
  • In a large mixing bowl, cream together the ghee and cold milk until light and fluffy.
  • Gradually add the flour, mixing well until combined.
  • Slowly incorporate the cold water, creating a smooth, lump-free batter. The consistency should be slightly thinner than pancake batter.
  • Add cardamom powder and saffron strands (if using) to the batter.
  1. Prepare the Sugar Syrup:
  • In a saucepan, combine the sugar and water.
  • Cook over medium heat until the sugar dissolves completely and the syrup reaches a one-string consistency.
  • Set aside and keep warm.
  1. Fry the Ghevar:
  • Heat ghee or oil in a deep, heavy-bottomed pan over medium heat. The oil should be at least 4 inches deep.
  • Pour a ladleful of batter into the hot oil, allowing it to spread out and form a net-like pattern.
  • Fry until golden and crisp, then carefully remove with a slotted spoon and drain excess ghee.
  • Repeat with the remaining batter.
  1. Soak in Sugar Syrup:
  • Immediately dip the fried ghevar into the warm sugar syrup, ensuring it’s coated well.
  • Remove and place on a plate.
  1. Garnish and Serve:
  • Garnish the ghevar with chopped nuts and silver vark (if desired).
  • Let it cool slightly before serving.
