Black Forest Tiramisu

Preparation:

 For the Tiramisu:

• 1 cup heavy cream
• 1/2 cup granulated sugar
• 1 teaspoon vanilla extract
• 8 ounces mascarpone cheese, softened
• 1 cup brewed coffee, cooled
• 2 tablespoons cherry liqueur (optional)
• 24 ladyfinger cookies
• 1 cup cherries, pitted and halved
• Shaved chocolate, for garnish

 For the Cherry Sauce:

• 1 cup cherries, pitted and halved
• 1 tablespoon lemon juice
• 1 tablespoon granulated sugar
• 1/4 cup water
• 1 tablespoon cornstarch

Method:

1. Prepare the Tiramisu:

• In a large mixing bowl, beat the heavy cream, sugar, and vanilla extract until stiff peaks form.
• Add the mascarpone cheese and beat until smooth and creamy.
• In a shallow dish, mix the brewed coffee and cherry liqueur (if using). Quickly dip each ladyfinger cookie into the coffee mixture, making sure not to soak them for too long.
• Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
• Spread half of the mascarpone mixture over the ladyfingers. Top with half of the halved cherries.
• Repeat the layers with the remaining ingredients, ending with a layer of mascarpone mixture on top.
• Cover and refrigerate for at least 4 hours or overnight to set.

2. Make the Cherry Sauce:

• In a saucepan, combine the cherries, sugar, lemon juice, and water over medium heat.
• Cook until the cherries are soft and the sugar has dissolved, about 5-7 minutes.
• In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry.
• Stir the cornstarch slurry into the cherry mixture and cook until thickened, about 2-3 minutes.
• Remove from heat and let cool before serving.

3. Assemble and Serve:

• Before serving, garnish the chilled tiramisu with shaved chocolate and drizzle with the cherry sauce.
• Slice and serve chilled.
