Blueberry Cream Cheese Spring Rolls: These Blueberry Cream Cheese Spring Rolls are a crispy, golden delight filled with a luscious mix of sweet blueberries and creamy cheese. Perfect as a dessert or snack, Blueberry Cream Cheese Spring Rolls offer a delicious twist on a classic treat!

Ingredients for Blueberry Cream Cheese Spring Rolls:

  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp cornstarch
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Spring roll wrappers
  • Vegetable oil (for frying)

Method for Blueberry Cream Cheese Spring Rolls:

  1. Prepare the Blueberry Filling:
    • In a small saucepan, combine blueberries, granulated sugar, lemon juice, and cornstarch.
    • Cook over medium heat, stirring constantly, until the mixture thickens and the blueberries burst.
    • Let cool completely.
  2. Prepare the Cream Cheese Filling:
    • In a bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Assemble the Spring Rolls:
    • Lay a spring roll wrapper flat on a clean surface.
    • Place a spoonful of cream cheese filling in the center of the wrapper.
    • Top with a spoonful of the cooled blueberry filling.
    • Fold the bottom edge of the wrapper over the filling.
    • Fold in the sides of the wrapper, then roll up tightly, sealing the edges with a little water.
  4. Fry the Spring Rolls:
    • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
    • Fry the spring rolls in batches for 2-3 minutes, or until golden brown and crispy.
    • Remove from the oil and drain on paper towels.
  5. Serve:
    • Serve the spring rolls warm with a dusting of powdered sugar or a drizzle of honey.

Tips:

  • For a healthier option, bake the spring rolls in a preheated oven at 375°F (190°C) for 15-20 minutes, or until golden brown.
