Preparation for Tandoori Masala Spice Mix

• 2 tablespoons ground cumin
• 2 tablespoons ground coriander
• 2 tablespoons ground paprika
• 1 tablespoon ground turmeric
• 1 tablespoon ground ginger
• 1 tablespoon ground garlic powder
• 1 tablespoon ground cinnamon
• 1 tablespoon ground black pepper
• 2 teaspoons ground cardamom
• 2 teaspoons ground cloves
• 2 teaspoons ground nutmeg
• 1 teaspoon ground cayenne pepper (optional, for extra heat)

Method:

• In a small bowl, combine all the spices: ground cumin, ground coriander, ground paprika, ground turmeric, ground ginger, garlic powder, ground cinnamon, ground black pepper, ground cardamom, ground cloves, ground nutmeg, and cayenne pepper if using.
• Mix thoroughly until all spices are well combined.
• Transfer the spice mix to an airtight container and store in a cool, dry place.
• Use this tandoori masala spice mix to marinate chicken, lamb, or vegetables for a delicious tandoori flavor.
